  • New Year's Huevos Rancheros


    New Year's morning had me craving something salty, crunchy and good. I whipped up an FAQ version of Huevos Rancheros using premade enchilada sauce (usually made with chile paste...not tomatoes), onions and white beans, put that on top of some fluffy scrambled eggs, and whipped up some of my famous all-green guacamole (I had to come up with a version without salsa since I can't have tomatoes or garlic). I threw in some blue tortilla chips and with big cups of steaming hot coffee in hand, we dug in and started the New Year right. Ah.

    The FAQ all-green guacamole

    Two ripened avocados, seeded and cubed
    1/4 tspn onion powder
    4 oz. can of diced green roasted chiles
    2 green onions, finely chopped
    1 Tbspn of olive oil
    2 Tbspn of chopped cilantro
    1 Tbspn of lime juice (I can't have citrus so use champagne/white wine vinegar)
    Salt and pepper to taste

    Mash all the ingredients to your liking...I like my guac chunky, some people like it super smooth. Salt and pepper to taste.
